Prickly Shrub Hand Pies — Amalfi Lemons, Desert Edition

The Amalfi Coast Road Trip left me ruined for ordinary citrus. Back home I fake cliff-side shimmer with lemon curd plus prickly-pear “shrub” — vinegar sweetened like a postcard — so the filling pings both coast and canyon.

What you'll need

  • 2 sheets puff pastry, thawed but cold
  • 1 cup lemon curd (jarred or brave-homemade)
  • ¼ cup prickly-pear syrup, 2 tablespoons apple cider vinegar, reduced together 5 minutes — that's the shrub cheat
  • 1 egg wash, coarse salt or turbinado for sparkle

How it comes together

  1. Blend curd and cooled shrub; taste — should be bright, not shy.
  2. Cut pastry into rectangles; spoon filling, fold, crimp with fork tines like a zealous notary.
  3. Brush egg wash; sprinkle sugar. Bake 200°C (400°F) until golden and gossiping — 16–20 minutes.
  4. Cool slightly; burn mouth anyway. Tradition.
